Food Companies Expect More Consumers to Worry About Toxins

Othmer Associate Professor of Chemical Engineering and director of NYU Tandon's Sustainable Engineering Initiative, weighed in on growing consumer anxiety about microplastics in food and packaging, noting that more research is needed on toxicity and cautioning that alternatives to plastic come with cost trade-offs: "There's always a question of, 'Will consumers be able to pay a little bit more?'"
